Who doesn’t love summer? The days are longer and there are so many in-season, fresh ingredients that you can pick up at your grocery store or local farmer’s market. However, with the longer days, comes hotter temperatures! It can be a daunting task to cook dinner without heating up the stove or oven.

Check out the below recipes that use in-season ingredients and cooking methods that will keep you cool.

 

Grilled Pesto Chicken with Summer Squash

While summer days can be HOT, summer evenings can be breezy and cool. Grilling is a great way to keep the heat out of your house or apartment while enjoying the cooler summer evenings. Many of our apartment communities offer BBQ grills and outdoor seating for residents to use. This recipe uses the grill for both the chicken and the veggies – keeping your air conditioner from working overtime.

 

Couscous Summer Salad

I know I can’t be the only one who thinks salads magically taste better in the summer. This salad combines all kinds of summer produce including fresh herbs, cucumbers, avocados, corn and peaches. As written, the recipe is vegetarian, but you could easily toss in some shredded rotisserie chicken for a little extra protein.

 

Instant Pot Low Country Boil

Do you own an instant pot? It’s a super-versatile countertop appliance that does anything from slow cooking, to yogurt-making but is most commonly used for pressure cooking. This instant pot recipe combines delicious shrimp which are at the peak of freshness with sweet corn, sausage, potatoes and cajun seasoning and comes together in just about 30 minutes!

 

Peach Sangria

Summer is porch-drinking sangria season. This white sangria has only five ingredients and uses fresh peaches which taste divine in the summer months. We might be biased because our corporate office is in Denver, but we think this recipe is even better with Colorado / Palisade peaches!
